When my favorite seasonal, farm-source salad chain sweetgreen (which has been a great host to my superfood breakfast masterclasses), asked me to share one of my favorite breakfast recipes, I knew it had to be something warming, nourishing and colorful. Say hello to this delicious amaranth porridge with earthy walnuts and colorful persimmons, which were in season when the recipe was created.
Amaranth, a recent discovery for me, has taken the Breakfast Criminals kitchen by the storm, becoming an absolute favorite. Hearty and incredibly nutrient rich, the tiny amaranth seeds have great amounts of fiber, protein, and calcium (more than milk!), and are gluten-free.
Like quinoa, amaranth is put in the ‘grains’ category, but in fact is the seed of a herbaceous plant. It has delicious, creamy-nutty flavour, and is a serious glow food, nourishing your body from inside out with its ancient superpowers. Back in the day, Aztecs used it not only in their diets, but also in worship rituals. Sounds pretty special, right?
