Nothing says summer like a tropical chia parfait.
This bright breakfast gets its gorgeous color from dragon fruit, also called pitaya. Pitaya Plus makes ready-to-go frozen dragon fruit smoothie packs that make it super easy to use this exotic ingredient.
This guest recipe is by Courtnie, of @wellnesswithcourtnie, a recipe developer and yoga teacher based in Southern California. Be sure to check out her beautiful Instagram for some amazing meal inspiration.
Courtnie also came up with a delicious smoothie topper for her parfait. It’s optional but we seriously recommend it. It takes like ice cream but is dairy and added sugar free. Enjoy!
