Nothing says summer like a tropical chia parfait.

This bright breakfast gets its gorgeous color from dragon fruit, also called pitaya. Pitaya Plus makes ready-to-go frozen dragon fruit smoothie packs that make it super easy to use this exotic ingredient.

INGREDIENTS:

  • 1/4 cup chia seeds
  • 1 1/2 cups almond milk
  • 1/2 cup coconut yogurt
  • 1 scoop collagen (We love Vital Proteins)
  • 1/4 cup frozen dragon fruit

Smoothie topper (optional):

  • 1/2 cup frozen dragon fruit
  • 1/2 frozen banana
  • 1/4 cup coconut yogurt
  • 1/4 cup almond milk

DIRECTIONS:

  1. Soak chia seeds in 1 cup almond milk for at least 2 hours, stirring occasionally until well absorbed. Add more almond milk if needed.
  2. Blend dragon fruit with 1/2 cup almond milk until smooth and liquid.
  3. Separate chia pudding into 2 bowls.
  4. Stir in coconut yogurt.
  5. Add half of the dragon fruit mixture to each bowl.
  6. Add more coconut yogurt to one bowl to achieve a lighter color.
  7. Blend smoothie topper (optional).
  8. Layer into a glass, top with smoothie topper and coconut shreds, and enjoy!
