This pumpkin pie acai bowl was created for my superfood friends over at Organic Burst to celebrate the gorgeous redesign of their packaging and website. Blended with Organic Burst Maca, of course. Dive in!
Acai bowls were the catalyst of my superfood journey and the creation of Breakfast Criminals. After watching “Food Matters” and starting to follow heaps of inspiring nutrition folks on Instagram, I knew I MUST try an acai bowl.
It so happened that I ended up in Hawaii shortly after, where acai bowls are huge part of the culture. Favored by surfers, acai bowls provide clean energy and a feeling of satisfied lightness (you’ll know what I mean when you try it!).
After coming back to NYC, I tried an acai bowl at a juice shop chain, and it just wasn’t the same. Something was missing, in a major way. So I bought acai along with some other superfoods, and started experimenting, sharing my creations with friends and posting recipes on Instagram.
I realized that you can get clean sustainable energy by eating delicious food with incredible health benefits, and since then I’ve been on a mission to share that. That’s how Breakfast Criminals was born. Now it’s a whole movement that inspires people around the globe to start their day with a nourishing superfood meal prepared with love, but it all started with an acai bowl served in a heart bowl.
My favourite part about the acai super-berry is its versatility. In the summer, I make acai bowls with pineapple and mango, and in winter, I blend it up with figs and pumpkin, keeping it seasonal.
Here’s a Pumpkin Pie Acai Bowl recipe created with Organic Burst Acai Berry capsules (I love that Organic Burst uses the latest technologies to preserve the goodness of organic acai to provide maximum benefits). I ended up topping the pumpkin pie smoothie bowl with gluten-free superfood creamy pumpkin pie (all kinds of crazy things happen at the Breakfast Criminals HQ, for experiment purposes of course, but that’s a different story).
Ingredients (makes 2 bowls):
- 8 Organic Burst Acai Berry capsules
- 1 cup pumpkin, baked (or use 1/2 cup pumpkin puree)
- 1 cup mixed frozen berries (blackberries, blueberries, strawberries – use what you have, if using fresh ones, add 3-4 ice cubes for thicker texture)
- 1.5 frozen bananas
- 1.5 cups coconut water (I used Vita Coco)
- 1 tsp pumpkin spice
- Optional: 1 tbs Organic Burst Maca for energy
Method:
Add all the ingredients to a blender and whizz well.
Toppings: Gluten-free granola (I use Purely Elizabeth), pomegranate seeds, Dang toasted coconut chips (my addiction!), pumpkin seeds, star fruit (optional). This superfood acai bowl tastes delicious and is also incredibly rich in antioxidants and vitamins, and has a great amount of fibre to support digestion.
