We love a breakfast that allows for creativity in toppings and superfoods, allowing you to switch it up depending on what you feel like that day.
That’s exactly why we love the Power Parfait by Robyn Youkilis, a health coach and the bestselling author of Thin From Within: The Go With Your Gut Way to Lose Weight. Robyn takes an intuitive approach to eating and emphasizes the importance of gut health (learn more on her website).
Here, Robyn shares one of her favorite and most popular breakfast recipes from her new book (find it on pages 36 and 82). This power trio of yogurt, oats, and chia is amazing for gut health. Yogurt is rich in probiotics, oats are full of prebiotic fiber, and the fiber in chia seeds aids in digestion.
The flexibility of this recipe allows you to practice intuitive eating and pick the options and toppings that work best for you an any given day. Robyn recommends goat’s milk yogurt, but you can also use organic cow’s milk, sheep’s milk, or plain coconut milk or nut-based milk yogurt (have you tried making coconut yogurt at home? It’s easier than you think!)
This recipe can also easily be adjusted if you are paleo or grain-free. We love Robyn’s tip to use shredded coconut and slivered almonds in place of the oats and granola. You can also use a grain-free granola (our favorites are from Purely Elizabeth and Paleonola, both available on Thrive Market). Power Parfait Recipe
INGREDIENTS:
- 3/4 cup yogurt
- 1/4 cup plain oats
- 1 tspn chia seeds
- Small scoop of protein powder
- Splash or two of homemade nut milk or water
- 3/4 cup fresh berries or other chopped fruit
- 1/4 cup low-sugar granola
- Optional toppings:
- Mango and shredded coconut
- Walnut and grated apple
- Fresh berry mix and mint
- Mashed cooked sweet potato swirl with almonds
- Nectarines, fresh figs and almond slivers
DIRECTIONS:
- Mix the first five ingredients together.
- Top with the fruit and granola. Eat immediately or store in the fridge for later!
