Imagine a revamped, healthy, insanely delicious version of the classic marble pound cake.
That is exactly what dessert queen RachL Mansfield (aka @rachlmansfield)has created with her Paleo Dark Chocolate Marble Sweet Potato Loaf.
This version is free of refined sugar, gluten, grains, and dairy. We love how this recipe features an all-time favorite ingredient, sweet potato. (For more sweet potato breakfasts, try these sweet potato protein pancakes or this sweet potato smoothie.)
If you can’t find a paleo chocolate muffin mix, you could always leave out the top layer and just make the sweet potato part. Keep the loaf in the fridge to eat throughout the week (if you can make it last that long!) or store some in the freezer for later.
Paleo Dark Chocolate Marble Sweet Potato Loaf Recipe
*Makes 8-10 slices
INGREDIENTS:
Sweet Potato Layer
- 2 cups almond flour
- 2 TBS coconut flour
- 1 tspn baking powder
- 1 tspn cinnamon
- 1 tspn nutmeg
- 1 tspn ground ginger
- 1 tspn vanilla extract
- 1 cup cooked sweet potato, mashed
- 2 eggs
- 1/4 cup maple syrup
Chocolate Layer
- 1/2 box Simple Mills Chocolate Muffin Mix (about 1 cup + 2 TBS)
- 1 egg, slightly beaten
- 3.5 TBS melted coconut oil
- 1/2 cup water
Chocolate Crumble Layer
- 1/2 box Simple Mills Chocolate Muffin Mix (about 1 cup + 2 TBS)
- 2 TBS melted coconut oil
- 1/2 tspn vanilla extract
- 1 TBS water
