Occasionally I wake up in a mood to create something new and unseen before. This past Sunday (which was also the Pride day celebrated by many of my friends) was such a day, and so I set out on a mission to create a rainbow smoothie.
Because love is love, and it should be celebrated with delicious superfoods! Here’s a layered smoothie I woke up my roommates with. There’s one secret you need to know to have success in making layered smoothies: make each blend as thick and frozen as possible, and set in the freezer after each layer to set.

From the bottom up, makes 3-5 smoothies depending on glass/jar size:
ELECTRIC PINK | PITAYA LAYER
Blend this:
- 1 frozen banana
- 1 Pitaya Plus frozen smoothie pack
- 1/3 cup coconut water or nut milk of choice
PURPLE | ACAI LAYER
Blend this:
- 1/2 frozen banana
- 1 acai smoothie pack (carried at most health food stores, freezer section, or sub with powdered acai)
- 1/2 cup blueberries, fresh or frozen
- 1 tsb coconut butter (optional)
- 1/3 cup coconut water or nut milk of choice
GREEN | WHEATGRASS LAYER
Blend this:
- 1 frozen banana
- 1 tbs wheatgrass (I love Organic Burst)
- 1 tbs pumpkin seed butter
- 1 tsp mesquite powder (optional, I love Sunfood)
- 1/3 cup full-fat coconut milk
YELLOW | MANGO LAYER
Blend this:
- 1/2 frozen banana
- 1/2 fresh or frozen mango
- 1/3 cup almond milk
PINK | STRAWBERRY CASHEW CREAM
Blend this:
- 1/2 frozen banana
- 1/2 cup fresh or frozen strawberries
- 1 tbs cashew butter (can sub with 2 tbs raw cashews)
- 1 tsp Philosophie Superfoods Berry Bliss (optional)
- 1/3 cup strawberry Tigernut Horchata (can sub with any plain nut milk)
Directions:
Blend each layer separately. Pour into a glass or jar. Let sit in the fridge for 5-10 minutes, or until solid, before pouring the next layer. Continue to do the same with each new layer. Serve with love.
