Inspired by a dinner party dessert gone awry, this recipe is great for when you want to whip up a batch of cookies with a healthy and elevated twist.

Gluten-Free Almond Rose Cardamom Cookies Recipe

*Makes 12 cookies

INGREDIENTS:

  • 1 flax egg or chia egg (1 TBS of ground chia or flax blended with 3 TBS of water)
  • 1 tspn vanilla extract
  • 2 TBS food grade rose water (rose hydrosol)
  • ½ tspn fine sea salt
  • 1 ½ tspn ground cardamom
  • 3 TBS granulated maple syrup or other sweetener
  • ¼ cup coconut oil
  • ½ cup oat flour (either use ready-made, or blend flat oats into a fine flour)
  • 1 cup almonds, ground into fine pieces in blender (the stage before almond butter)
  • Maldon sea salt flakes

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, mix together flax/chia egg, rose water and vanilla.
  3. Add sea salt, cardamom and granulated maple syrup and blend together.
  4. Mix in coconut oil, making sure it has fully softened and blended.
  5. Add almonds and oat flour, stirring until fully combined.
  6. Line baking sheet with parchment paper. Shape dough into 1-inch balls and press flat to ½  inch thickness. Sprinkle Maldon sea flakes on top.
  7. Bake for approximately 15 minutes, making sure the bottom does not become overly brown.
  8. Let the baking sheet sit on cooling rack for several minutes before transferring the cookies from the pan.
