Blood Orange Overnight Oats Recipe

INGREDIENTS:

  • 1/2 cup rolled oats
  • 1 TBSP chia seeds
  • 1 scoop collagen (Ksenia’s note: my favorite collagen is from Vital Proteins)
  • 1 coconut yogurt (here’s how to make homemade coconut yogurt)
  • Splash of Oatly oat milk (Ksenia’s note: or try my recipe for DIY Oatly)
  • A squeeze of fresh blood orange
  • Pinch of salt
  • Pinch of vanilla bean powder
  • For toppings: toasted coconut chips, cacao nibs

INSTRUCTIONS:

  1. Mix all the ingredients together.
  2. Leave in the fridge overnight.
  3. In the morning, top with segments of the blood orange, toasted coconut chips, and cacao nibs, and enjoy!
