Vegan Superfood Cherry Almond Cookies

When it comes to snacks for energy, I usually go for nuts and vegan nutrition bars. But sometimes I feel like something more interesting than nuts, and less sweet than all the nutrition bars out there. That’s where these healthy superfood energy cookies come in! They’re crunchy, deliciously satisfying, nutrient-rich, and give you a perfect boost of clean energy thanks to maca and almonds. The best part is that they’re super easy to make!

I’ll be bringing these for the bus ride to VA this weekend to go to Sweetlife Festival organized by my favorite salad shop in the world, sweetgreen. I’m just as excited about the food lineup as I am about the music one: Bakery De France being represented with their insanely delicious gluten free buckwheat bread is enough to get me excited, and there’s so many more cool vendors! Vegan Superfood Cherry Almond Cookies

*vegan, gluten free, added sugar free, soy free

MIX IN A BOWL: 

  • 2/3 cup almond pulp (I used pulp remaining from making my own almond milk, feel free to use almond flour or gluten free oat bran)
  • 1/2 cup Purely Elizabeth gluten free ancient grain pancake mix
  • 3 tbsp ground chia with flax (or just chia), mixed with 3 tbsp of warm water
  • 1/3 cup walnut pieces
  • Grated peel of 1 lemon
  • 1 inch grated ginger
  • 3 tbsp sesame seeds
  • 3 tbsp shredded coconut
  • 1/4 cup dried cherries
  • 1/2 tbsp maca
  • 1 teaspoon Cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup brown rice syrup (I used it because of lower contents of fructose per Sarah Wilson, but feel free to use agave)
  • 2 tbsp almond butter
  • 2 tbsp coconut oil
  • pinch of sea salt

Grease a baking pan with coconut oil, roll the dough into small balls, put on the pan and shape into cookies. Bake 20-30 minutes and 350F/180C.
