Who said comfort foods have to be bad for you?
I’ve been a big fan of making cauliflower pizza with Daiya Cutting Board Collection Shreds – a cheese alternative we recently discovered at Whole Foods. It is dairy, gluten and soy-free!
I’m not a fan of using the words “guilt” and “eating” in the same sentence, but if that’s in your lingo – then yes, this pizza is guilt-free. I’m not asking you to erase the word guilt out of your dictionary, but I do invite you to examine why food would make you feel guilty. Try this: before eating something you’re not sure about, ask yourself “will this decision empower me”?
This inquiry is something we’ve been doing when grocery shopping. By taking a pause to evaluate your decision (in front of the ice cream freezer), you’re creating the space to make a more conscious and empowered decision. It works!
The good news is that if you decide that some of your unhealthy pleasures is not the way you want to go, there are plenty of better-for-you alternatives. We avoid dairy as much as possible at home, so we love Daiya for its generous selection of better-for-you versions of comfort foods. Their campaign “Comfort Foods That Love You Back” gives the spotlight to delicious comfort foods that are free of dairy, gluten and soy – just like this pizza!
The simple truth is that there isn’t a recipe for my go-to pizza. Instead, I make a kitchen sink pizza using seasonal vegetables and any leftovers I might have in the fridge.
This pizza formula makes a complete meal that is comforting, nourishing and delicious!
Here’s my cauliflower pizza formula with seasonal vegetables:
- Cauliflower pizza crust, or another gluten-free plain pizza crust
- Daiya Mozzarella Cutting Board Collection Shreds (so cheezy and melty!)
- Vegetables: cooked and chopped squash or sweet potato (steam or bake it)
- Greens: Either add kale before baking the pizza, or add arugula or basil after baking right before you serve
- Spices: Himalayan salt, pepper and red chili flakes if you like it spicy.
- Ferments (add after cooking): Ever thought of adding sauerkraut to your pizza? If not, you’re missing out. It adds crunchy texture and gut-friendly nutrition, making it a complete meal.
- Avocado (add after cooking): Need I say more?
Directions:
- Prepare the crust according to instructions, the time will vary based on the crust you’re using.
- If you’re using the cauliflower crust, which usually takes 11 minutes to bake, do this: add toppings, bake for 11 minutes, then add the other ingredients (avocado, fresh greens, ferments).
Given how cheesy Daiya tastes, it’s no surprise that they have a whole line of plant-based, non-dairy foods. I tried the Cheezy Mac and it’s LEGIT and yes, it’s also dairy free, gluten free, soy free and non-GMO. Win!
