A warm, nourishing loaf of walnut bread. What could be better? A walnut loaf with açaí!
This gluten and dairy free, paleo-friendly loaf is rich in fiber, antioxidants and healthy fats. Have it as is, or combine with a savory or sweet spread (I’m thinking a nut butter or beet hummus and sauerkraut!)

Ingredients:
– 2 açaí packets, thawed (we recommend Tambor Acai – sweetened or unsweetened, depending on your taste!)
– Flour: 1 cup coconut flour, 1 cup almond flour, 1/2 cup buckwheat flour
– 1/2 cup flaxseed meal
– 1 cup water
– 1 medium banana, cut in cubes (measures approx. 1 cup)
– 1/2 cup mixed berries
– 1/2 cup walnuts, chopped
– 3 eggs *for a vegan version, replace with 1 TBS. chia seeds or flaxseed meal combined with 2.5 tbsp water; mix and let set for 5 minutes to activate
– 1/3 cup coconut oil, melted
– 1/3 cup almond butter
– 3 TBS. ground chia seeds
– 2 TBS. cacao powder
– 2 TBS. cinnamon
– 1 1/2 tbsp baking powder
– 1 TBS. honey
– 1 1/4 tspn. gelatin (Like Vital Proteins Gelatin) *for a vegan version, replace with psyllium powder
– 1 tspn. vanilla powder
– 1/2 tspn. sea salt
Directions:
- Preheat oven to 375 degrees. Make sure rack is in the middle of the oven.
- Grease loaf pan with coconut oil and dust with coconut flour (I still do this even if my loaf pan is silicone). For metal/cast iron pans, you can use parchment paper only to cover loaf pan.
- Sift coconut flour, almond flour, buckwheat flour, cinnamon, cacao powder and baking powder into a large bowl.
- *Coconut and almond flour can be hard to sift. In this case, you can place these flours straight into bowl, making sure there are no clumps when mixing it with the other dry ingredients.
- *If you do not have a flour sifter, a mesh strainer works just as well.
- Add flaxseed meal, ground chia seeds, gelatin and sea salt to dry ingredients. Blend together. Make sure everything is mixed in and there are no clumps.
- In a blender mix acai packets, water, eggs, coconut oil, honey and vanilla. Blend for 10 seconds or until combined.
- Take the liquid mixture and stir into dry ingredients. Mix very well. It should have a thick wet dough consistency. You can use hands to give it a final mix, like playing with wet dough! There should be minimal ingredients left on the sides of the bowl.
- Fold in walnuts, almond butter, berries, and bananas. Mix well. *If using frozen berries, make sure to roll them in flour before folding them into the wet dough. Do not let defrost. Take these straight out of the freezer, roll in flour and fold into the loaf. This will prevent bleeding.
- Transfer batter into loaf pan. Pack it into the pan and smooth the top.
- Place in the middle of the oven and bake for 65-70 minutes. If you have an instant read thermometer, check to make sure the loaf is 200 degrees (F) in the middle.
- Take out of the oven and let cool fully.
- Remove from loaf pan and slice carefully. Enjoy!
- To freeze part of the loaf: let it cool, slice it, place baking paper sheets in between the slices, wrap in foil plus a ziplock bag, and freeze.
