HEALING BLUEBERRY GINGER OATMEAL
If you’re feeling the weather, or just have a craving for a warm breakfast that’s truly like a hug from the inside, this oatmeal is for you. I only had frozen bananas in my kitchen, so I knew I had to work around it, and it turned out delicious! This immunity boosting superfood breakfast bowl has enough enzymes, protein, antioxidants and potassium to keep you energized.
- 1/2 cup Purely Elizabeth gluten free ancient grain oatmeal (I usually soak them at least for a few hours so that enzymes are released, find out more about soaking oats here)
- 1/2 cup water
- 1/2 cup coconut milk (more if using unsoaked oats)
- 1/3 cup blueberries (fresh or frozen)
- 1 inch chopped ginger
- 1/2 tsp chopped lemon peel
- 1 tsp coconut oil
- 1/2 tsp cinnamon (I get fair trade cinnamon in bulk from Frontier Coop)
- 1/2 chopped banana
