Somehow I never thought about soaking buckwheat instead of my usual oats. Thanks to The Raw Food Sisters, I have a new favorite breakfast recipe to share with you! Even though it is usually thought of as a grain, buckwheat is actually the seed of a broadleaf plant related to rhubarb. Unlike rice, wheat or corn, it supports a healthy blood sugar level, and has essential amino acids and protein. Health benefits are increased once it’s soaked, so try this out this creamy, nutty, nourishing vegan and gluten-free porridge for your next breakfast.
Ingredients:
- 1/2 cup Buckwheat groats, soaked in water overnight or for at least 30 minutes
- 1 banana
- 2 dates
- 1 tbsp maca powder
- 2/3 cup unsweetened almond milk
Blend everything together on high speed until creamy, then top with your favorite fruit and superfoods.
Topped with:
- Cinnamon
- Blueberries
- Strawberries
- Pomegranate seeds
- Hemp seeds
