Before breakfast criminalizing anyone, I usually ask if they have any dietary restrictions or preferences. When Nitika Chopra notified me that she’s a big fan of raspberries, peanut butter and protein, I knew making breakfast for her would be fun.
This Raspberry Chia & Peanut Butter Parfait served with crunchy buckwheat granola and coconut chips is a real treat. Packed with omega-3 and omega-6 fatty acids, plant protein, and antioxidants, it will also keep you fueled until lunch. Enjoy!
Layer One: Buckwheat granola
Layer Two: Chia Pudding
Ingredients:
- 1/3 cup chia seeds
- 1/2 cup raspberries
- 2 cups almond milk
- 1 tablespoon peanut butter
- 2 tablespoons maple syrup
- 2 tablespoons walnuts
- 1 teaspoon maca (energy boost)
- 1 teaspoon baobab (optional)
Directions: Mix everything well in a glass jar, store in the fridge overnight.
Layer Three: Dragonfruit protein smoothie
Ingredients:
- Pitaya Plus raw frozen dragonfruit (1 pack)
- 1 cup pineapple
- 1 cup frozen raspberries
- 1/2 avocado
- 1 scoop plant based protein
Directions: Blend on high speed.
Toppings: buckwheat granola, peanut butter, raspberries, coconut chips, pecans or walnuts.
