Sometimes my breakfasts look (and taste!) like dessert, so I thought, why not switch it around, and have make a dessert recipe for breakfast for a special occasion? Who made the breakfast rules anyway? That’s where Larina of The Body Dietics came in.
Larina recently featured me in Friday Night In With Ksenia From Breakfast Criminals, and that’s when these chocolate raspberry brownies caught my eye. Holidays are coming up, why not surprise your family and friends with the delicious smell and taste of these whole food, guilt-less brownies?
Chocolate Raspberry Brownies
(makes 28 brownies)
Ingredients:
- 4 eggs
- 1 avocado
- 100g almond butter
- ½ cup pure maple syrup
- 1 tbsp vanilla extract
- 4 fresh medjool dates
- ½ cup cocoa powder
- ¼ cup coconut flour
- 1 tsp baking soda
- ¾ cup fresh raspberries, plus extra for garnish
Directions:
- Line an 8×8 inch baking pan with baking paper. Preheat oven to 180 degrees C.
- In a bowl, combine all the wet ingredients with a hand mixer. Sift the dry ingredients into the wet and mix till smooth. Fold in the raspberries.
- Pour the mixture into the pan and bake for 20-25 minutes. Let cool. Cut into squares. Garnish with fresh raspberries.
Note that these can be baked the day before, and they get fudgier over time.
