While in Squaw Valley for Wanderlust Fest with Wellness Warrior Collective, I set an intention to really step up my snacking game. With jam-packed schedule of yoga sessions, meditative dance, media events and hikes, I knew that I’d have to bring some solid snacks to sustain me throughout the day. So I made these protein energy balls with my favorite organic plant based protein, froze them, and brought them with me to California.
Bliss balls, energy balls, protein balls… whatever you call them, the deliciously nutty sphere-shaped snack is one of my all-time favorites. They’re versatile (combinations of nuts, seeds, dried fruit and powdered superfoods you can use are endless), and super easy to make (don’t let the fancy looks misguide you).
These protein energy balls not only kill two birds at once: give you a healthy energy boost and satisfy a sweet tooth. Perfect as a pre-workout snack! The texture reminds me of caramels, and tropical (thanks to coconut shreds) dessert-like feel is guaranteed. Try replacing your go-to nutrition bar with these superfood-packed babies, you won’t be disappointed.
The Perfect Protein Energy Balls Recipe
Ingredients:
- 1/2 cup cashews, soaked in filtered water for 4-5 hours and rinsed
- 1/3 cup walnuts
- 4 medjool dates, soaked in hot water for at least 20 minutes
- 1/4 cup desiccated coconut
- 4 tbs honey (or sweetener of your choice – I love brown rice syrup)
- 2 tbs coconut oil
- 2 tbs filtered water
- 2 scoops of Sprout Living Vanilla Lucuma protein
Optional toppings for rolling:
- 3 tbs raw cacao nibs
- 3 tbs desiccated coconut
Directions:
- Combine all ingredients in a food processor or high speed blender.
- Pulse until combined well.
- Prepare a surface (large cutting board is perfect) and roll the mixture into balls, then roll them in cacao nibs and/or coconut.
- Freeze for two hours, and enjoy! Keep the energy balls in a tightly closed container in the fridge for up to a week, or in the freezer for up to there weeks.
