A warm, nourishing stack of pancakes with fresh berries, drizzle of honey and creamy tahini. How’s that for a breakfast?
While I’m not usually a pancake girl, when I do make them, they better be damn good. Like these chocolate maca protein pancakes.
This time, I went for a sweet potato version of the classic protein pancakes but with the addition of Kashi’s new vegan protein powder, GOLEAN Plant Powered Shake.
These super healthy pancakes are gluten free, easy to make and will leave you energized for hours. Sweet potato, the star of the show, is a nutritional powerhouse rich in calcium, potassium, vitamins A and C, copper (which assists in production of collagen for beautiful skin) and dietary fiber. The only (optional) added sweetener here is the honey drizzle, but you’ll be nicely surprised on how perfectly sweet and flavorful these orange-tinted babies are. Give this recipe a try!
Sweet Potato Protein Pancakes
Yields approximately 7 pancakes
Ingredients:
- 1 cup baked sweet potato, chopped (may use canned sweet potato, then use less milk to make sure batter is thick enough)
- 2 eggs
- 1/2 banana (save the rest to serve)
- 1 cup oat flour (to make oat flour, place 1 cup gluten-free oats in a blender or food processor and pulse until flour-like)
- 2 scoops Kashi GOLEAN Plant Powered Shake in Vanilla Vinyasa or Original Inspiration
- 1/2 cup coconut milk (or another milk of your choice)
- 1 tsp. cinnamon, 1/2 tsp. turmeric, pinch of salt
- 5 tbsp. coconut oil for cooking
Toppings (get creative!): Fresh berries, honey, tahini.
Directions:
- Combine all ingredients in a blender.
- Blend until thick and creamy.
- Heat a skillet over medium-low heat. Oil the pan with coconut oil.
- Pour about 1/4 cup batter on the heated pan and cook about 2 minutes on each side.
- Serve with fresh berries, honey and optional drizzle of tahini or nut butter.
