INGREDIENTS:
- 1/2 avocado
- 1 cup kuzu pudding (see more about kuzu + get the super easy recipe below. It’s been used by Eastern healers for over 2000 years and boasts with benefits and is worth ordering on Amazon to use as a non-sweet smoothie thickener and more!)
- 1/2 tspn. mint extract or fresh mint leaves
- 1 cup baby spinach
- 1 tspn. matcha powder
- 1 tspn. moringa powder
- 2 TBSP. tocos (optional superfood boost)
- 1/4 cup coconut meat (use fresh or frozen coconut meat – Trader Joe’s sells it, or replace it with 2 TBSP. coconut butter)
- 1/2 green apple
- Dash of cinnamon
- 1 scoop collagen peptides – optional (we recommend Vital Proteins)
DIRECTIONS:
- Blend all ingredients and freeze them in cubes.
- Remove cubes from freezer, let thaw for 2-3 minutes, reblend in a high-speed blender until thick and creamy.

BUT WHAT IS KUZU?
Kuzu pudding is a base ingredient to many of the bowls in my ebook! It’s one of those “go-to” items in my house ever since I stumbled upon it a few years ago. Take a look below as I break down the benefits and give you the who, what, why.
KUZU – sometimes pronounced (kudzu) is a root native to Japan. It’s been used in Chinese medicine for years for its amazing anti-inflammatory and antioxidant properties. With its thick viscous like consistency, it’s very stomach-soothing as it coats the lining, providing you with protection. This in combination with it’s high level of flavonoids does wonderful work in strengthening your digestive and circulatory systems.
Kuzu works as a natural stress reliever by promoting your body to produce hormones responsible for reaching a calm state. Kuzu has been used to treat menopausal and perimenopausal symptoms due to its phytoestrogen content; riding things like hot flashes and night sweats.

HOW TO MAKE A BATCH OF KUZU PUDDING:
YOU’LL NEED:
- 3 TBS. kuzu starch powder
- 6 TBS. water
- 1 1/3 cup coconut milk (light)
- Shake of sea salt
HOW:
- Mix Kuzu + water in a small bowl until it becomes dissolved.
- Heat coconut milk + sea salt on the stove at medium/high heat until it reaches a simmer.
- Pour the kuzu mixture into the coconut milk and whisk continuously for 1-2 minutes until a pudding consistency starts to occur.
- Remove from the heat, and store in an airtight container in the fridge for up to 8 days.
